I am not special.
Somewhere, there is someone who looks just like me.
In a far away country there is someone who laughs like me.
In a big crowded city there is for sure a woman who
thinks like me.
In a place that I’ve never been before there is a human being who
believes,
writes,
dreams,
like me.
In a more familiar place, not quite sure exactly where, there is a mother who
sings the same songs,
has the same name,
speaks the same language.
Somewhere in the world there is someone who thinks she is special, like me.
I am not a special one.
I am just one.

Carrot soup is nothing special
ingredients
- 2 Tbs olive oil
- 1 small green hot pepper (optional for spicy lovers), diced
- 1.5 lbs organic carrots, peeled and chopped.
- 1 medium onion, diced.
- 2 stalks celery, chopped.
- 2 garlic cloves, crushed.
- 1 Tbs coriander seeds
- 1 tsp cumin powder
- 1/2 tsp turmeric
- 1 medium juicy tomato, diced.
- 8 cups vegetable stock.
- 1 tsp grated ginger root (or more if you like ginger)
- salt
- pepper
In a big pot on medium heat, heat the oil.
sauté the onion, until it turns clear. add 1/2 tsp salt. cook another 5 minutes.
add half of the pepper, garlic and coriander seeds. stir another minute.
add carrots, celery, tomato, ginger. stir another minute.
add cumin and turmeric and the vegetable stock and let it cook for 45 minutes or until the carrots are really soft.
taste.
if not spicy enough, add some of the hot pepper.
let it cool down, and blend .
taste.
add salt and pepper if needed.
to serve,
chop some fresh herbs (i love basil the best) and a squeeze of lime.
it’s super yummy when cold too:)
