When my kids eat pomegranate seeds, they describe how each seed sprays juice in their mouths, and how each one tastes so different.
when my dad peels the pomegranate and separates the seeds, he sits on the couch and there are 20 pomegranates from my grandma’s tree on the coffee table and a big glass bowl.
he cuts the fruit gently around and separates each seed with his big hands like each seed needs special care.
My dad is a happy guy most of the time, but I think he is happiest when he looks at the bowl 2 hours later full with pomegranate rubies.
Pomegranate makes me feel uncomfortable. There are so many seeds that I don’t understand. I can’t decide if they are too sweet or too sour. They are so beautiful too…
When my kids ask to eat pomegranate, I cut the fruit in half around, like my dad.
I hit it with a wooden spoon and the seeds fall into the glass bowl and red juice sprays everywhere and makes a big mess.
My boys are watching me and they ask if it hurts.
Sometimes, I answer.
Pomegranate Cilantro and Almond salad
Ingredients:
- 2 bunch cilantro (or parsley, if you don’t like cilantro)
- 1/4 cup slivered almonds
- seeds from 1 pomegranate
- 1 Tbl soy sauce
- 1 Tbl lemon
- 1 Tbls olive oil
- 1 tsp maple syrup (optional)
Chop the herb, mix all ingredients.
serve and enjoy.
